Power Greens Salad

2 cups Kale, chopped
2 cups Baby Spinach, chopped
1 cup Romaine, chopped
1/2 cup mushrooms, sliced
1/2 cup cherry tomatoes, halved
1 red pepper, chopped
1 small red onion, chopped

Directions:

Toss  all ingredients in a large bowl.  Top with sliced or slivered almonds, if desired.

Dressing:
1 large lemon (zested and squeezed to get 1 tsp. lemon zest and 2 T lemon juice)
3 T extra-virgin olive oil
1/4 tsp. dijon mustard
salt and fresh-ground black pepper to taste

CTH MISSION’S CINNAMON “FIX” BULLET COFFEE

1 cup black coffee of your choice (for an extra pick-me-up try adding a sprinkle of instant espresso to your brew)
1 teaspoon unrefined coconut oil
1/8 teaspoon of flavor extract (try vanilla, hazelnut, almond, peppermint, etc.) optional
1 teaspoon turbinado raw cane sugar
Sprinkle of cinnamon (optional)

Brew your coffee as desired — we used a Keurig pod. Add instant espresso if you desire. Carefully pour hot coffee into blender and add coconut oil, optional extract of choice and turbinado raw cane sugar. Place lid on top, and blend until frothy. Pour back into your cup and sprinkle cinnamon on top if desired.
