Crockpot Greek Lemon Chicken

INGREDIENTS

  • 6 thin sliced, boneless skinless chicken breasts, frozen
  • 2 red peppers, coarsely chopped
  • 1 small can sliced black olives
  • tsp  oregano
  • 1⁄4 tsp  salt
  • 1⁄4 tsp  pepper
  • 2 lemons, sliced and pits removed
  • cup  chicken broth
  • 3 tbsp  lemon juice (bottled is fine)
  • 2 -3 tbsp garlic, minced
  • 1 tbsp cornstarch

DIRECTIONS

  1. Spray crock pot with non-stick spray.
  2. Place all ingredients in the crockpot and gently stir
  3. Cover and cook on low 4-5 hours.
  4. Serve chicken with brown rice or quinoa.

Serving size: 4 ounces of chicken and 1 cup of sauce.
